What you need

cup soy sauce

lb chicken leg quarters
potato

carrot

bunch enoki mushrooms

lb chicken thigh

cup water

bunch scallion

pinch salt

pinch black pepper

tbsp sesame oil

onion

garlic

cup mirin
Instructions
1. Cut small slits into the chicken pieces to allow the sauce to penetrate. 2. Place the chicken in a large pot or Dutch oven. 3. Season the chicken with salt and pepper. 4. Add chopped potatoes, carrots, and onions on top of the chicken. 5. Pour water, soy sauce, sesame oil, and honey over the ingredients in the pot. 6. Top with chopped scallions and enoki mushrooms. 7. Cover the pot and cook on medium heat for 30 minutes, until the chicken is tender and cooked through. 8. Garnish with more fresh scallions before serving. 9. Serve hot, ideally with rice.
