A flavorful and spicy one-pot Korean braised chicken dish, made with tender chicken drumsticks, potatoes, and onions simmered in a sweet and spicy gochujang-based sauce, and finished with rice cakes, sweet potato noodles, and enoki mushrooms.

What you need
tbsp gochugaru

cup mirin

splash salt

cup soy sauce

pinch black pepper

Instructions
1. In a bowl, combine soy sauce, mirin, water, gochugaru, gochujang, and honey to create the sauce. 2. Soak rice cakes and sweet potato noodles in water to soften them. 3. Cut slits into the chicken drumsticks and season them with salt and pepper. 4. Place the seasoned chicken drumsticks in a large pot or Dutch oven. 5. Add sliced onions, chopped potatoes, and large pieces of green onion on top of the chicken. 6. Add minced garlic and pour the prepared sauce over all the ingredients in the pot. 7. Cover the pot and cook on medium heat for 20 minutes. 8. Uncover the pot and add the soaked rice cakes, sweet potato noodles, enoki mushrooms, and chopped green onions. 9. Cover and continue to cook for another 10 minutes, until the chicken is cooked through and the sauce has thickened. 10. Gently mix all the ingredients together and serve hot.
