What you need

daikon radish

Instructions
1. Soak the beef short ribs in cold water for 30 minutes to drain the blood, then drain. 2. Place the drained ribs in a large pot. 3. Add sliced onions and garlic over the ribs. 4. Top with chopped carrots, potatoes, daikon radish, and large pieces of green onion. 5. Pour soy sauce, mirin, water, and honey over the ingredients. 6. Bring the pot to a boil over high heat, then cover and cook for 20 minutes. 7. After 20 minutes, stir everything to mix well. 8. Reduce the heat to low, cover the pot, and let it simmer. 9. After about another 20 minutes, add enoki mushrooms and chopped spring onions as toppings. 10. Cover and continue to cook for a few more minutes until the mushrooms are tender. 11. Taste the broth and adjust seasoning if needed. 12. Serve the tender ribs and vegetables hot.
