
One-Pot Kongbul with Udon

What you need

oz bean sprouts

bunch enoki mushrooms

clove garlic clove

tbsp honey

tbsp sesame oil

cup soy sauce

bunch green onion

tbsp sesame seed
bunch perilla leaves

lb beef brisket

tbsp mirin
tbsp gochugaru

Instructions
1. In a small bowl, combine chopped garlic, soy sauce, mirin, gochugaru, gochujang, sesame oil, honey, and sesame seeds to create the sauce. Mix well. 2. In a large pot or dutch oven, layer the ingredients starting with the onions and green onions at the bottom. 3. Add a generous layer of bean sprouts on top of the onions. 4. Place the udon noodles over the bean sprouts. 5. Add a layer of perilla leaves. 6. Top with the thinly sliced beef brisket. 7. Pour the prepared sauce evenly over all the ingredients in the pot. 8. Cover the pot and cook on medium heat for 20 minutes without stirring. 9. After 20 minutes, uncover the pot and stir everything together to combine and distribute the sauce. 10. Add the enoki mushrooms on top and sprinkle with additional sesame seeds. 11. Cover the pot again and cook for another 2-3 minutes until the mushrooms are tender. 12. Give the dish a final mix and serve hot.
